APPLE PIE FILLING COFFEE CAKE

INSTRUCTIONS:

  • Step 1 – Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Step 2 – In a medium bowl, prepare the apple pie filling by combining diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and flour. Set aside.
  • Step 3 – In a separate large bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
  • Step 4 – In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, alternating with sour cream, until just combined.
  • Step 5 – Spread half of the coffee cake batter into the prepared baking dish. Top evenly with the apple pie filling.
  • Step 6 – Dollop the remaining coffee cake batter over the apple pie filling, spreading it as evenly as possible.
  • Step 7 – To make the streusel topping, combine flour, granulated sugar, brown sugar, and cinnamon in a bowl. Cut in cold diced butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Sprinkle the streusel topping over the coffee cake batter.
